BRIKA eats: Healthy dark chocolate pecan glazed donuts

This recipe completely reversed two preconceived notions we had about donuts: 1) they can be healthy, and 2) they can be made at home. Using ingredients any health-conscious household would already have and producing pretty works of art in less than 30 minutes, these airy and addictive donuts are paleo and free of gluten, dairy and refined sugars. Recipe courtesy of Laura at the Guilt Free Goodness – follow along on her culinary adventures into healthy baking on her Instagram here. donut2 Prep time: 10 minutes Bake time: 12 minutes at 350 F Makes 12 mini donuts What you need: 1 mini donut pan For the donuts: 3 eggs 1/3 cup coconut oil, melted 1/3 cup almond milk ¼ cup maple syrup 1 tbsp vanilla ½ cup coconut flour 1 tsp cinnamon 1 tsp baking soda For the frosting: 1 tbsp coconut oil ½ cup dark chocolate chips ¼ cup chopped pecans Directions:
  1. Preheat oven to 350 F.
  2. Whisk together eggs, melted coconut oil, almond milk, maple syrup and vanilla.
  3. Add in dry ingredients, coconut flour, cinnamon and baking soda to the wet mixture and whisk.
  4. Spray the donut pan with coconut oil spray or rub melted coconut oil into each donut compartment.
  5. Use a tablespoon and spoon the mixture into the donut pan.
  6. Bake for 12 minutes at 350 F
  7. Let cool for 5 minutes, then gently remove each donut
  8. For the frosting melt 1 tbsp of coconut oil and add ½ cup of coconut chips in a double boiler.
  9. Gently dip each donut in the melted chocolate mixture.
  10. Sprinkle chopped pecans on top.
