Yes, you read right – there is such a thing as healthy chocolate chip cookie dough bites. Protein-packed, gluten-free and vegan, these bites are a far cry from the refined sugar and oils you’ll find in Pillsbury Cookie Dough, and the best part is that they don’t compromise on taste. Perfect for snacking, throwing in your kids’ lunches (they'll love you for it!) or as a dessert when you have a hankering for something sweet and salty, another bonus (although, need we say more?!) is that these are dead simple to make and take under 10 minutes. Makes 12 bites What you need: 1 cup raw cashews 1/2 cup old-fashioned or gluten-free rolled oats 1/2 teaspoon salt 1/2 teaspoon cinnamon 3 tablespoons maple syrup or honey (use honey if you prefer something sweeter) 1 tablespoon vanilla extract 1/4 cup dark chocolate chips (we used mini chocolate chips, finding them easier to mix in) Directions Combine the cashews, oats, salt and cinnamon in a food processor. Pulse together until a fine meal forms. Add the maple syrup and the vanilla extract to the cashew-oat mixture. Pulse again until the mixture comes together to form a meal-like consistency. Pour the dough from the food processor into a small bowl. Gently fold in the chocolate chips so they are incorporated throughout (you may want to use your hands for this). Using your hands, pack the dough into bite-sized morsels. Throw them into a Ziploc bag and into the freezer – they’re more chewy when they’re cold – or consume immediately. Enjoy!
